Further - moving in, attacking and moving out again is silly and I'm probably going to make it provoke passive attacks (so you can do this if you've got a high defence or strong armour, otherwise it'll let your opponents get lots of free hits).
Can you even pull that without resorting to fatigue or DP for extra actions?

What about moving away if your first and only other action in the round is an attack? It does indeed take DP, fatigue, or need to be spread out over multiple rounds. It hurts my sense of verisimilitude if it can be done without exposing yourself to an attack.
Ser Jon - Disengaging should generally provoke an attack if you're engaged, yes. That's the way we played it in Southron ambitions and I'm borrowing it.

I did all the romances except Sera because she annoyed me too much. I loved all of them, though I think Iron Bull's gets special points for being so bloody progressive. Only time I've ever seen a romance option in a game check for consent. Massive thumbs up.

till someone's down. It hands the reigns of the fight to people wearing the heaviest armor and biggest shield, because anyone trying to walk away from them is just going to get smacked. Sounds excessive to me.

Why would it expose yourself to attack? You take an action to tactically move about the battlefield.
The disengage houserule from SA was something entirely different if memory serves. You could still be engaged and move away. What you're proposing is to hurt those who invest in greater mobility.

Day 6 would keep us in schedule, but we could say final 8 is mostly now 4 PC vs. 4 NPC, then last 4, then the final, so I believe is rather quick if you find the way to manage so many jousts in 1 day
