You can arrange marriages, create plots, assassinate other people.. it's really fun, but has a steep learning curve.
My partner plays it too. Once, while playing a female child heir, pushed one of the advisors off a balcony because they didn't like them, hehe.

Oh yeah! Sometimes they have your character transform a toilet into a bomb and explode by using all the gasses. Dangerous times, especially for annoying advisers and people in front of you in line of inheritance.

You don't need any dlc, but you can use a lot of them with the mod.
I only use ruler designer and way of life. I don't think the latest mod version is compatible with the latest update of CK, but frankly don't remember the details on which version of the game works with what version of the mod. That should all be in the mods description.

I also have spent over 200 hours with Crusader Kings 2, much of which has been spent with the SoIaF mod (in which, perhaps strangely, I have mostly been playing Ironborn). But yes, very, very steep learning curve. I really didn't understand what was going on at all until I looked at some Youtube video tutorials, and I'm a very experienced strategy gamer.
It is, I would say, probably my favourite strategy game, and one of my favourite games of any genre. I think because in many 4x-type games, it's pretty rare that I suffer serious setbacks without it being a prelude to defeat. While in this game, you can lose vast amounts of territory and power from an unfortunate succession, but once you've done that, you're reasonably safe again, and can start rebuilding your power base, so it has much more dramatic highs and lows than most other games of its like I've played.
There's one DLC, Legacy of Rome, that I would say is critical. I think you need it for Factions to appear. They are such a big part of the game that I wouldn't play it without that. Old Gods is probably also critical if you intend to play ironborn in the mod. Off-hand, I would say everything else is 'nice to have'.

Cool! I played a lot too, but less than you:) Factions are great!
I loved playing as ironborn, but playing as Aurane Waters in Feast scenario is my favorite. You can raid and pillage and not have the Iron Throne constantly want to conquer you.
Playing as Balon in 5 Kings scenario is awesome, especially if you accept Rob's offer.

I think it'll either be that Ben challenges Athelstan or Athelstan challenges Baelon.
The dark horse is that somebody challenges Yoren/House Longshore in general and Athelstan steps up as champion.

Loreia will...not. She has no reason, but she wouldn't mind having one. How I justify the hostility at Riverrun during what was supposed to be practice is that Loreia had never dealt with the Ironborn in any capacity other than violent conflict. She's gotten over it now, and kinda realized on her way back from Thenn that she's going to have to deal with the Ironborn more often in a neutral setting, and continuing to flaunt her grudge the way she has will only make things unnecessarily difficult. She learned this when trading with Thenns and traveling with her Free Folk grandmother. Don't worry, the hate is still there, for both groups.
I've realized I need to drop the outright hostility In Character for Athelstan being a raider, because that happens far away from us in Essos, and Dorne when they're at conflict with the rest of the Seven Kingdoms. Maybe we all do, just a bit. Some of your characters may be able to overlook raids on Essos, but Loreia's lived it and doesn't really care if those people at Slaver's Bay are nasty people. She'll hold a grudge, but she can leave hostilities at the door - at least now she can.

A year is a long time in politics. But even if rumours do arise, I doubt they'll stick. Like last time, they'll likely be forgotten in days.
